Cumin Spiced Almonds Makes 2 cups 3 tablespoons peanut oil 2 cups whole blanched almonds 1/2 cup, plus 1 tablespoon sugar 1 1/2 teaspoons kosher salt 1 1/2 teaspoons ground cumin 1 teaspoon red pepper flakes 1. Heat oil in a heavy frying pan over medium-high heat. Add the almonds and sprinkle the 1/2 cup sugar over them. Saute until the almonds are golden brown and the sugar caramelizes. 2. Remove almonds from the pan and toss in a bowl with the salt, cumin, pepper flakes and remaining tablespoon of sugar. 3. Serve warm or at room temp. Store in an airtight container. |
