Baked Whole Cauliflower


1 head cauliflower
1/2 cup bread crumbs
2 tablespoons grated Parmesan cheese
1/4 cup butter, melted
1 clove garlic, minced
1/8 teaspoon salt
1 pinch red pepper flakes
1 pinch dried oregano


1. Clean cauliflower and trim off leaves and any brown spots. Cut the stalk so that the cauliflower will stand upright and cut a cross in the base to ensure even cooking. Soak the whole cauliflower for 10 minutes in salted water before cooking, to draw out any insects.

2. Place the whole head of cauliflower into a steamer basket, place the basket in a large pot, and add one inch of water. Cover, and bring to a boil over medium heat. Cook for about 10 minutes or until just tender.

3. Preheat the oven to 375°F. In a medium bowl, mix together the bread crumbs, Parmesan cheese, melted butter, garlic, salt, red pepper flakes, and oregano. Place the head of cauliflower into a baking dish, and coat with the breadcrumb mixture (if it doesn't stick, lightly brush cauliflower with olive oil first).

4. Bake for about 15 minutes or until golden brown.
