Toan's Moroccan Chicken

1 chicken, cut into parts
2 green onions
6 cloves garlic
1 bunch of cilantro
2 teaspoons paprika
1 teaspoons cumin
1 teaspoons ground coriander
1/4 teaspoons cinnamon
1/2 teaspoons fresh ground black pepper
cayenne pepper to taste
1 teaspoons kosher salt
1/2 teaspoons sugar
1 teaspoons fish sauce
juice of 1 lemon
1/2 cup olive oil

1. Grind green onions, garlic and cilantro into a rough paste in mortar pestle or food processor.

2. Combine with the rest of the ingredients and marinate chicken, refrigerated overnight.

3. Grill on the bbq, or bake in 425 preheated oven for 20 minutes, then 30-40 minutes more at 375, or until done.

Great served with couscous and Moroccan Orange and Olive Salad!
