Crostini with Gorgonzola, honey and walnuts makes around 24 small crostini 2 tablespoons olive oil 1 baguette, cut on the diagonal into 1/3" slices 8 oz creamy Gorgonzola, coarsely crumbled 2/3 cup walnuts, toasted and coarsely chopped 6 ripe figs, thinly sliced (optional) 3 tablespoons honey, warmed slightly 1. Turn broiler on. Brush baguette slices with oil and broil until golden. (Can be made 1 day ahead and stored in airtight container.) 2. Heat oven to 375 degrees. Mash Gorgonzola and walnuts together in a small bowl. Spread mixture onto toasted baguette slices and arrange on a baking sheet. Place in a 375 degree oven and bake for about 8 minutes or until cheese melts. 3. Transfer to a platter, top each crostini with a few slices of fig (if desired) and then drizzle with warmed honey. |
