Alsatian Bacon & Onion Tartlets Quick and easy if you buy pre-made tartlet shells. Great to make ahead and freeze. 2 large onions, thinly sliced 2 tablespoons olive oil Salt & pepper 1 large egg 1/2 cup heavy cream Pinch of nutmeg 1/2 pound bacon, sliced into matchsticks 2 dozen, ready-made, one-inch tart shells 1. Preheat oven to 350°F. 2. Heat oil over medium heat in a large frying pan. Add sliced onions and cook until soft and lightly browned. Add salt and pepper to taste, then cook 5-10 more minutes until lightly caramelized. Remove from heat. 3. While the onions are cooking, cook the sliced bacon over low heat until lightly golden brown but not crisp. 4. In a small bowl, beat the egg and cream together. Add a pinch of salt, pepper and nutmeg. 5. Spoon onions into uncooked tartlet shells, then gently pour in cream mixture and top with a sprinkle of bacon. Bake 15-20 minutes (on a baking sheet to catch drips) until tartlet shells are golden. The baked tartlets may be frozen in a tightly covered container. To reheat, place frozen tartlets on a pan in a 400°F oven until hot, about 10 minutes. |
